Cooking Classes range from $40 to $65 per person per class unless otherwise stated and include bread and oil for snacking and beverages of iced tea, soda or house sangria to enjoy during class. Some classes prepare a full meal which is consumed in class and or take-home food to enjoy at a later date, please see the details for each class below to plan accordingly. Each class discusses short-cuts, additions and techniques developed in the restaurant on all of our homemade recipes so note taking is always encouraged as well as an apron for use during the class experience.

  JANUARY

FRIDAY, JANUARY 4TH – PASTA MAKING; MAKING GNOCCHI – 6PM TO 9PM – 20 MAX. STUDENTS (GLUTEN FREE OPTIONS)

Enjoy A Friday evening learning to form and make fresh Potato Gnocchi from scratch.  (If you are Gluten Free and miss eating pasta this class is for you as we will have an option and instructions on making Gluten free Gnocchi’s as well as the regular recipe).  This cooking class will teach you how to make your own Gnocchi as the main course for your evening dinner and then we will cook each student’s fresh Gnocchi for them to enjoy with a choice of fresh made sauces.  Aprons are recommended as each student will be working with his/her own dough and is a hands-on cooking class.  *Includes light beverages, cooking instruction and printed recipes.  ($40.00/per person, includes Gnocchi dinner.) *may bring your own bottle of wine if desired.

SATURDAY, JANUARY 5TH  - WINTER SOUPS – 4PM TO 7PM – 20 MAX. STUDENTS

This class is All about Soups, so if you are a soup lover it is perfect for you.  With the cold setting in for us, soups make a perfect tasty meal to prepare as well as an healthy option for the new year. In this class we will be making soups from scratch using fresh ingredients and building flavors; Cold and Hot soups will be explored in this series. (some chopping and peeling will be required for this class, but majority of class will be observation of instructor, note taking and sampling/eating all prepared dishes).  *Includes light beverages, cooking instruction, all supplies and groceries as well as recipes of the dishes prepared in class to take home and an evening meal of three types of soups. *May bring your own bottle of wine to share. Tuesday, JANUARY 15TH – HEALTHY COOKING WITH FRESH HERBS  - 5:30PM TO 8PM  - 20 MAX. STUDENTS

This class is perfect for beginner cooks who don’t know their way around using fresh herbs and spices in dishes to create healthy bold, flavorful dishes.  Students will learn about the health benefits of different herbs used in class as well as how to create different dishes and spice them accordingly.  Details and information on stocking your home kitchen with fresh herbs will also be discussed.  This class will be mostly observation and note taking is encouraged.  All food prepared in class will be consumed by students.  3 different types of recipes will be prepared in class and consumed by class so come hungry.  This is mainly an observation type class with some minor chopping involved.  Note taking is encouraged. *Some dietary restriction can be accommodated such as Vegetarian & Gluten free – please mention in details at registration if requesting.   ($40.00/per person, includes all food prepared in class, and beverages.)

This class is all about wines and wine pairings.  The Class will explore a multiple coursed dinner that is prepared by our house chef fresh and in front of the class with discussion throughout each course.  The chef will also feature the selected wines in each course as it is paired with the dishes for the evening.  This is a great date night or fun night out with friends eating great food and drinking even better wines.  Tastings, dinner and chef instruction prepared by Chef/Owner Michelle Gioviti-Reeves from the Fat Tuscan.  Each course will be selected to perfectly complement the wines that you will be presented. This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make fresh sauces to pair with the pasta. One seating, only 15 couples - so your table is yours for up to 3 hours on this evening. This class is all about fun and cooking together.  In this hands-on cooking class challenge, couples will cook and prepare an appetizer paired with a wine to present to the class for consumption.  Voting for the best appetizer and presentation will take place at the end of class.  Winners receive a prize of their choice bottle of wine from the evening.  This class will also explore multiple types of wines paired with each appetizer.  There will be 5 groups of 4 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will provide assistance and guidance but all cooking will be done by student contestants.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.   This is a great date night or fun night out with your valentine.   Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person.

Do you love making desserts?  Have you been a customer who loved our light and fluffy Ricotta style cheesecakes?  This is the perfect class for those students that love to bake, or who find desserts frustrating.  Our customers loved our cheesecakes when our café was open and their light and fluffy texture was the key to their success.  This class will go over the Ricotta Cheesecake recipes developed by the Fat Tuscan chef and each student will be making an individual cheesecake to take home.   The chef will prepare a cheesecake in class and teach students to make a cake as well.  (A chilled Cheesecake made in advance will also be eaten by students at the end of class to show desired texture and outcome)  (*Individual baking will be done at home.  *Students need to bring a 9 inch spring form pan.  *all ingredients will be provided by Fat Tuscan however.) SUNDAY,  MARCH 3rd – BREAD CLASS – WORKING WITH WET YEAST DOUGH’S  16 Students Max.  1:30pm to 5pm

Explore working with wet yeast dough’s in this class.  Each student will work with two types of dough, both a savory & sweet bread Dough.  Students will learn how to combine ingredients, knead and rise yeast dough’s to create a savory dough and a sweet nut & fruit bread.  This hands-on class provides all the raw ingredients and one-on-one instructions on bread making are covered.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed.  One bread will be baked in class and each student will go home with their baked bread and some dough to bake at a later time.  Aprons are recommended for this class as each student will be working with substantial amounts of flour.  ($40.00 per person, includes light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.) *Kids are welcome in this class. **Bring a container for transporting the 2nd yeast dough home.

Join us for an evening of fun learning to make homemade Pizza from scratch. We will learn how to make pizza sauce and dough from scratch. Each student will work at individual stations to learn to make a dough from flour and yeast and how to rise it.  Afterwards each students has a dough of their own to shape and then top with fresh assorted items.  A full toppings bar will be provided by the Café of fresh assorted pizza toppings such as fresh spinach, grilled onions, pesto, cheeses, meats, etc.  And, then we will bake each pie for the student to consume at the end of class.  Aprons are recommended as this is a hands-on class AND dinner all in one; bring an apron and an appetite. WEDNESDAY, MARCH 20TH – TARTS & BUTTER DOUGH COOKING CLASS WORKSHOP – 11AM TO 2PM - 15 MAX. STUDENTS

Learn to create butter pie dough from scratch and work with your dough to make a fresh tart. This class will explore working with cold butter to create soft tart pie dough.  Assorted jam fillings will be provided for students to use to fill their tarts and then instructions on forming a lattice top for baking.  All Ingredients will be provided. This class is perfect for beginners. Learn to make perfect pie dough and then use it to create a fresh fruit pastry. Each student will be working with his/her own dough throughout class. Children are welcome with a parent. THURSDAY MARCH 21ST – PASTA MAKING; MAKING FETTUCCINE & ALFREDO SAUCE  – 6PM TO 9PM – 20 MAX. STUDENTS (Vegetarian friendly)

This class will explore making fresh pasta from scratch using egg, flour and oil as well as learning to make a fresh sauce to pair with the pasta. Students will be making their own pasta from scratch as well as cutting it into the Fettuccine shape.  The instructor will also give a demonstration on making the best fresh classic Alfredo sauce.  Students will then be consuming their pasta at the end of class, so come prepared to eat.  An apron is encouraged for this class as each student will be working with flour and dough at their own stations.  **includes dinner of fresh made pasta with a choice of sauce; a classic Marinara sauce will also be available. I LOVE MY DOG - BRUNCH & BISCUITS -  9am to 1pm  – 35 Students Max. (Start times vary 9am, 10:30am and 12:00

Do you love your dog? Do you love Brunch?  Do you want to hang with your best friend making yummy treats for him/her?  This class is for you!!  Bring that pup to our patio with you for a class on making Dog Biscuits.  We will provide you with fresh wholesome dog biscuit dough from fresh ingredients with different flavors and you get to cut out and make assorted biscuits for your best friend to take home, (We won’t tell if some go missing along the way either.) Come enjoy a Sunday Brunch alongside your best pooch with us on our patio eating some tasty brunch foods, (don’t’ worry there will be lots of fresh foods for humans to eat too!)  We will supply all the ingredients for flavors such as Peanut butter Bacon, Chicken and Beef flavored dog biscuits for you to choose from and then each student will roll out, cut dog biscuit shapes and we will bake them for you while you eat an assortment of brunch items.  Each student will go home with around 10 – 15 biscuits for their pet with recipes of all the flavors included.  (Dogs must be on a leash and outside seating only with your pet is allowed.  Inside seating available but only for students without pets.)  ($40.00/ per person, includes a full brunch buffet with refreshments including mimosa’s and Sangria, cooking class recipes for Dog Biscuits to take home as well as fresh baked Dog Biscuits for each student to take home.   *At sign up you must pick one of the three start times above, space is limited. THRURSDAY, APRIL 4TH  -  MAKING FLAVORED PASTA’S & CLASSIC SAUCES – 20 Max  STUDENTS  - 6PM TO 8:30PM.   

Come out and enjoy a fun evening learning to make fresh pasta’s from scratch with your choice of flavoring for your pasta such as tomato, spinach, pesto and even bright red beet colored pasta.  This class will also include a demonstration of the instructor teaching and making two different fresh sauces from scratch during the length  of the class.  Then students will cook, eat and dine on their fresh pasta made with a choice of the sauces made for you in the class.  This class will explore using flavorings in pasta.  (*plain is also taught if no flavoring is desired).  An apron is encouraged for this class as each student will be making their own pasta for the evening using flour and eggs.  *may bring your own bottle of wine. *kids welcome ** includes a full dinner of fresh made flavored pasta with a choice of fresh sauce made in class.  ($40.00/per person includes dinner, cooking class instruction and printed recipes.  This is a hands-on type of class.)

Join us for a fun Sunday Brunch of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. *kids welcome.  ($40.00/per person, includes class instructions and a full brunch of crepes and side dishes.  This will be a hands-on type of class.)

MOTHER'S DAY HIGH TEA BRUNCH & COOKING CLASS

Mother's Day High Tea Brunch and Cooking Class - Come enjoy a High Tea Brunch served in our courtyard with mom.  Starting at 11am we will be serving everything from scones and biscuits to eggs with mini cucumber sandwiches on English tiered towers for your enjoyment.  Included of course with assorted hot teas.  Also, as no brunch is complete without it, unlimited mimosa's and sangria's for you and mom to enjoy.  Then beginning at 12:30 we will have a class on Making Homemade Biscotti.  This will be a hands-on class in which each student will learn to make a biscotti dough from scratch and then flavor it with an assorted mixture of ingredients provided.  The instructor will prepare a biscotti batch from start to finish in class for consumption by students.  At the end of class warm biscotti will be served with hot tea and/or coffee.  Each student will be going home with a completed ready-to-bake dough for eating at a later date. In this Chef Dinner Cooking Class, 4 different courses will be prepared using fresh herbs and local produce and paired each with a different type of White Wine to compliment the food.  All courses are prepared in front of the class throughout the night and Chef and Owner, Michelle Gioviti-Reeves from the Fat Tuscan, will be discussing and pouring samples of each wine presented.  This class is for students interested in learning about wines, tasting wines and enjoying gourmet food prepared fresh while learning how to pair each wine with select courses to make a dining experience for future dinner parties and guests.  This class is mainly and observation type class and a relaxed dinner atmosphere. *Proper ID required

SUNDAY MAY 26TH  BRUNCH & CREPES Cooking Class -  11am to 2pm - 20 students max. 

Join us for a fun Sunday Brunch of fresh buttery crepes filled and topped with your choice of a variety of ingredients and toppings.  (This is Graduation Weekend so you might want to enjoy a fun morning away from the crowds too.) We will learn to make both sweet and savory crepes in the class and each student will flip and form his/her own crepes.  This is a perfect time to enjoy a morning brunch served with mimosa’s and Bellini’s as well as a full brunch buffet of fresh baked foods alongside the class.  Students will learn to make, form and flip crepes in this class with each student making and flipping their own crepes.  Assorted toppings, stuffing’s and condiments will be available to fill the crepes.  A Brunch buffet will also be available for students to eat with the crepes.  The class consists of some observation and some hands-on to learn technique. ($40.00/per person, includes class instructions and a full brunch of crepes and side dishes.  This will be a hands-on type of class.)

The Fat Tuscan Cooking School offers students the most comprehensive Cooking Camp in Florida.  Our students get all day one-on-one experience from experienced chefs and work in a real kitchen preparing recipes.  With our hands-on learning approach we encourage each student to prepare recipes and meals for themselves and their families.  This camp is perfect for the kid who is excited about learning to cook and wants experience in the kitchen.  We provide each one of our small week long camps with the opportunity for students to feel engaged and comfortable working with food.  Our approach to learning about cooking is from working with our hands and our passions to enjoying the creativity of cooking as it nourishes a child from the inside out.  Cooking is way to learn positive self esteem and encourages learning through cooking.  There are always lots of laughs and love in our camp kitchen and we encourage learning through tactile engagement and hands on approaches to build self esteem, it is a strength which can build into many areas of a child’s development as well as learning through the act of doing and performing.

Supply fee will cover, flour, eggs, an individual apron for your child to take home at end of class, food items, canning and pickling items, to go containers, snacks, food projects to take home and all food groceries needed for all recipes.  As well as printed take home recipes for the week.

This amazing Cooking Class will be a wonderful week long stay in the heart of Tuscany Italy staying in the middle of the olive groves and countryside.  Each couple will be located at a small Bnb which once was an old grain mill and with Cooking Classes taking place each night at the home of an traditional Italian family.  The Cooking Class Vacation includes 8 night stay in a Bnb, transportation, breakfast & cooking class dinner, 7 nights of cooking class instruction, 6 days of excursions to small little medieval towns amongst the hills of Tuscany and a full time chef and interpreter during your week stay.  The classes and your accommodations will take place in a small village about one hour from Florence Italy near Arezzo.

FRIDAY, NOVEMBER 9TH – IRON CHEF - COUPLES COOKING CHALLENGE – APPETIZERS & WINE – 6 TO 8:30PM - 20 MAX. STUDENTS.

This class is all about fun and cooking together.  In this hands-on cooking class challenge, couples will cook and prepare an appetizer paired with a wine to present to the class for consumption.  Voting for the best appetizer and presentation will take place at the end of class.  Winners receive a prize of their choice bottle of wine from the evening.  This class will also explore multiple types of wines paired with each appetizer.  There will be 5 groups of 4 students with different recipes and ingredients to prepare at separate table stations.  The Chef instructor will provide assistance and guidance but all cooking will be done by student contestants.  Each appetizer will be shared with the entire class and consumed with each different wine sampled.   This is a great date night or fun night out with your valentine.   Tastings, recipes, ingredients and chef instruction is provided from the Fat Tuscan.  Each appetizer will be selected to perfectly complement the wine tasted and then prepared by the students with chef instruction.  (*includes 5 different appetizers paired with 5 different selections of white wine.) *Proper ID required* / $65.00/per person. THURSDAY, NOVEMBER 15TH  – Winter Soups & Wine; Squash and Pumpkin Bisques. -  6pm to 8pm  – 20 Students Max.  ***THIS CLASS IS FULL

This class will be a night of making soups from scratch, using fresh ingredients and building flavors as we create warm hearty bisques. Wine will be paired with each soup presented ( a total of three soups will be prepared and eaten in class served with warm hearty Tuscan Bread.  (some chopping and peeling may be required for this class, but the majority of the class will be observation of instructor so note taking and sampling/eating all prepared dishes will be the main participation from students.  This class is perfect for the person who loves soups and wants and entire evening’s dinner dedicated to eating soups and sipping wine.  Recipes of dishes will be available to all students. Join us at this Sunday afternoon class before thanksgiving and learn to make PIES!  Each student will make two pie dough’s from scratch. Join us at this evening class exploring all things Pastries!  Learn to pipe, make and fill delicate pastries baked in class.  Recipes will include vanilla pastry cream, chocolate Mousse, and Vanilla whipped cream as well as the recipe for creating Cream Puffs and Éclairs.  This will be a hands on class with some detailed work required such as piping and filling warm delicate pastries.  Each student will go home with an assorted mix of pastries so a container is recommended for the finished pastries to be taken home. Aprons are recommended as this is a hands-on class and chocolate may be used.  (Hands on class - $40.00/per person, includes all groceries, supplies, tools, class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class.) *This class may not be suitable for Children due to the delicate nature of the pastries involved.

In this cooking class afternoon workshop we will be learning about Traditional Italian Holiday Breads and creating some to take home to enjoy.  This class will work with Yeast breads and sweet breads and explore tastes and flavors for each.  Each student will be working with their own dough and creating specialized flavors of their choice for each.  This is a perfect class for the upcoming holiday season.  The breads will be taken home to be baked at a later date, but some breads will be baked in class and tasted as part of the demonstration.  Aprons are recommended as this is a hands-on class.  (Hands on class - $40.00/per person, includes all groceries, supplies, class instruction and printed recipes.  Snacks will also be provided as well as some tastings during this class.) *Children are welcome.  *THIS CLASS IS SOLD OUT.

Wednesday,  December 26th - BREAD  MAKING CLASS – WORKING WITH YEAST DOUGH’S  16 Students Max.  1:30pm to 4pm  - This class is now full. - ROSTER SIGN UP CLOSED

Explore working with yeast dough’s in this class.  Each student will work with two types of dough, both a savory & sweet bread Dough.  Students will learn how to combine ingredients, knead and rise yeast doughs to create a savory dough and a  sweet nut & fruit bread.  This hands-on class provides all the raw ingredients and one-on-one instructions on bread making are covered.  Each student will work at his/her own station and work with their own dough. Rising time and working the dough will be discussed.  One bread will be baked in class and each student will go home with their baked bread and some dough to bake at a later time.  Aprons are recommended for this class as each student will be working with substantial amounts of flour.  ($40.00 per person, includes light beverages & snacks as well as cooking instructions and recipes.  This is a hands-on type of class.) *Kids are welcome in this class. **Bring a container for transporting the 2nd yeast dough home.  THIS CLASS IS FULL.

In this class learn about Salt & Sugar preserving.  We will be reviewing methods and types of traditional preserving as well as making an assortment of Citrus Preserves such as Candied Orange peel, Country Lemons (Preserved Lemons), and assorted Citrus Fruit Jams.  All supplies, groceries and canning jars will be provided as part of the class, but if you have some backyard citrus trees please bring as these are the best types of citrus to preserve; (Local variety’s have the best flavor and are the freshest for flavor).  Light snacks will be served with refreshments during class.  ($40.00 per person, includes class instruction, refreshments and snacks, all supplies, groceries and recipes to take home.)
